Lavender Mocktail with Blackberry & Tonic

Ingredients
  

Lavender Syrup

  • ½ cup cup granulated sugar
  • 1 cup water
  • 2 tablespoon dried culinary lavender
  • 2 sprigs fresh thyme (optional)

Per Mocktail

  • 3 blackberries
  • 2 tablespoon lavender syrup
  • ½ to ⅔ cup tonic water
  • ice cubes
  • Fresh lavender or thyme (for garnish, optional)

Instructions
 

Make the lavender syrup

  • Add ½ cup cup granulated sugar, 1 cup water, 2 tablespoon dried culinary lavender, and 2 sprigs fresh thyme (if using) to a saucepan.
  • Bring to a gentle simmer and stir until the sugar fully dissolves.
  • Remove from heat and let steep for 2 hours.
  • Strain through a fine mesh sieve and refrigerate until chilled.

Make the mocktail

  • Add 3 blackberries to a glass and gently crush with a fork or muddler.
  • Fill the glass with ice cubes.
  • Add 2 tablespoon lavender syrup.
  • Top with ½ to ⅔ cup tonic water and stir gently.
  • Garnish with Fresh lavender or thyme if desired.

  • Use culinary lavender only, other types may taste bitter.
  • Taste the syrup before serving and dilute with extra tonic if needed.
