Mango Orange Popsicles with Yogurt

- 1 large ripe mango (or 1½ cups frozen mango chunks)
- 1¼ cups orange juice
- ½ cup thick Greek yogurt
- 2 teaspoon vanille extract
- 1-2 tablespoon honey (optional, to taste)
Peel and dice 1 large ripe mango.
Blend mango with 1¼ cups orange juice until smooth.
Pour the mixture into popsicle molds, filling about ¾ full.
Freeze for 1 hour (until slightly set).
In a bowl, mix ½ cup thick Greek yogurt, 2 teaspoon vanille extract, and 1-2 tablespoon honey (if using).
Spoon the yogurt mixture on top of the mango layer.
Insert sticks and freeze for at least 4 hours or overnight.
Remove from molds and serve.
