Grilled Pineapple with Soy Caramel

Ingredients
  

For the pineapple

  • 1 fresh pineapple (peeled and sliced into rings)
  • 4 scoops vanilla ice cream
  • 2 tablespoon black sesame seeds (optional)

For the soy caramel

  • ½ cup granulated sugar
  • 2 tablespoon water
  • cup heavy cream (warmed)
  • 2 tablespoon unsalted butter
  • 1 tablespoon soy sauce

Instructions
 

Make the soy caramel

  • Add ½ cup granulated sugar and 2 tablespoon water to a saucepan. Heat over medium heat until the sugar dissolves.
  • Let it cook without stirring until it turns a deep golden amber color. Swirl the pan gently if needed.
  • Carefully add ⅓ cup heavy cream (warmed), (it will bubble up), whisking continuously.
  • Remove from the heat. Stir in 2 tablespoon unsalted butter until smooth.
  • Add 1 tablespoon soy sauce and mix well. Let cool slightly.

Grill the pineapple

  • Heat a grill pan or BBQ over medium-high heat.
  • Pat 1 fresh pineapple (sliced) dry and grill for 2–3 minutes per side until caramelized and lightly charred.

Assemble

  • Serve the grilled pineapple on 4 plates and add 4 scoops vanilla ice cream.
  • Drizzle generously with soy caramel and sprinkle with 2 tablespoon black sesame seeds if desired.

Notes

  • Don’t stir the sugar while it caramelizes—this prevents crystallization.
  • Taste your soy caramel and adjust slightly if needed (different soy sauces vary in saltiness).
