If you've never tried soy caramel, this recipe is about to surprise you, in the best way. This grilled pineapple dessert combines smoky, caramelized fruit with a rich, glossy caramel sauce enhanced with soy sauce. The result? A perfect balance of sweet, salty, and umami that feels both familiar and completely new.

At first glance, soy sauce in a dessert might sound unusual. But if you think about it, it's not that different from salted caramel. The difference is that soy sauce doesn't just add salt: it adds depth. That deep, slightly savory note transforms a standard caramel into something far more complex.

And paired with warm, juicy pineapple and cold vanilla ice cream? This is the kind of BBQ dessert people will remember.

Why soy caramel works

Most caramel recipes rely on salt alone to balance sweetness. But one common complaint you'll find in forums and recipe comments is that caramel can taste flat or overly sweet. Soy sauce solves that.

It adds:

  • Saltiness (like salted caramel)
  • Umami depth (something salt alone can't do)
  • A slightly savory edge that makes desserts more interesting

The key is using just enough. Too much soy sauce will overpower the caramel. The right amount creates balance.

How to caramelize pineapple properly (without burning it)

Another common frustration is that pineapple turns soggy instead of getting that beautiful caramelization. Here's what makes the difference:

  • Use fresh pineapple (not canned)
  • Pat it dry before grilling
  • Use high heat to create those caramelized edges
  • Don't move it too quickly, let it sit so it can develop grill marks

Grilling intensifies pineapple's natural sugars, giving it a slightly smoky, caramelized flavor that pairs perfectly with the soy caramel.

A dessert that works year-round (not just for BBQ)

While this is a perfect BBQ dessert, you don't need a grill to make it. A grill pan works just as well, making this a great option even in colder months.

If you enjoy creative desserts with a twist, this pairs beautifully with other unique recipes on my blog like prickly pear ice cream or a light, refreshing tea jelly.

Make it simple or go all out

You can absolutely make the soy caramel from scratch (and I recommend it), but if you're short on time, there's a shortcut: just stir a little soy sauce into store-bought caramel sauce. It won't be quite the same, but it still delivers that sweet-savory effect.

The flavor experience (why this works so well)

Grilled pineapple on a plate, served with vanilla ice cream and soy caramel sauce.

This dessert hits every note:

  • Sweet (caramel + pineapple)
  • Salty & umami (soy caramel)
  • Cold & creamy (vanilla ice cream)
  • Warm & smoky (grilled pineapple)

It's simple, but layered, and that's exactly what makes it stand out.

Frequently Asked Questions

Can I use canned pineapple?

Fresh is strongly recommended. Canned pineapple contains more moisture and won't caramelize as well.

What kind of soy sauce should I use?

Use regular soy sauce (not low sodium for best flavor balance).

Why did my caramel crystallize?

Stirring too much or uneven heating can cause this. Let it cook undisturbed.

Can I make soy caramel ahead of time?

Yes. Store in the fridge and reheat gently before serving if needed.

Is this dessert very salty?

No, the soy sauce enhances the caramel but doesn't overpower it.

For the pineapple

  • 1 fresh pineapple (peeled and sliced into rings)
  • 4 scoops vanilla ice cream
  • 2 tablespoon black sesame seeds (optional)

For the soy caramel

  • ½ cup granulated sugar
  • 2 tablespoon water
  • ⅓ cup heavy cream (warmed)
  • 2 tablespoon unsalted butter
  • 1 tablespoon soy sauce

Instructions

  • Add 1 tablespoon soy sauce and mix well. Let cool slightly.

Grill the pineapple

  • Heat a grill pan or BBQ over medium-high heat.
  • Pat 1 fresh pineapple (sliced) dry and grill for 2-3 minutes per side until caramelized and lightly charred.

Notes

  • Don't stir the sugar while it caramelizes-this prevents crystallization.
  • Taste your soy caramel and adjust slightly if needed (different soy sauces vary in saltiness).
