- 3 eggs
- 1 sprig fresh mint finely chopped
- 1 small bunch chives finely chopped
- salt and pepper to taste
- 1 tablespoon herb cream cheese
- smoked salmon
- 2 oz smoked salmon
- 1 handful baby spinach
In a bowl, beat the eggs with the chopped herbs, salt, and pepper.
Heat a nonstick frying pan over medium heat. Add a little oil and pour in the egg mixture. Cook until just set, flip and cook untill done . Let the omelette cool.
Spread the cooled omelette with herb cream cheese.
Layer with smoked salmon and fresh greens.
Roll up tightly and slice in half. Serve immediately or wrap for later.
