Ingredients
  

  • 3 eggs
  • 1 sprig fresh mint finely chopped
  • 1 small bunch chives finely chopped
  • salt and pepper to taste
  • 1 tablespoon herb cream cheese
  • smoked salmon
  • 2 oz smoked salmon
  • 1 handful baby spinach

Instructions
 

  • In a bowl, beat the eggs with the chopped herbs, salt, and pepper.
  • Heat a nonstick frying pan over medium heat. Add a little oil and pour in the egg mixture. Cook until just set, flip and cook untill done . Let the omelette cool.
  • Spread the cooled omelette with herb cream cheese.
  • Layer with smoked salmon and fresh greens.
  • Roll up tightly and slice in half. Serve immediately or wrap for later.
