What is ganache?

Ganache is a creamy mixture with a chocolate base. It is often used as a filling or topping for cakes and desserts. The great thing about ganache is that it can be varied endlessly. You can use different flavors of chocolate or replace the cream with pureed fruit to make a filling for macarons or bonbons.

Making ganache is easy. Heat the cream, combine it with the chocolate and butter, and let it set again. Voila; ganache!

Ingredients Oreo ganache cake

I loooove baking recipes that are easy to make: for this is easy chocolate cake, you only need five ingredients!

Oreo cookies: the cake base is made of Oreo cookies. I find Oreo thins or Oreo crumbs the most easy to work with. You can also use traditional Oreos with filling, but you must scrape the filling off the cookies first, which is more work.

Butter: Use butter to hold the base together and bind the ganache.

Milk chocolate: The chocolate is the main ingredient of the ganache layer, so buy the best quality chocolate you can afford.

Cream: used to make the chocolate ganache. For this recipe, use full-fat cream, not a lower-fat variety.

Red fruit: Fresh fruit is a wonderful topping for the Oreo ganache cake, balancing all that sweetness and the richness of the ganache. I used strawberries and blueberries, but raspberries are also delicious.

Variation tip: add chopped nuts to the topping for extra texture. Chopped pecans, for example, are delicious.

Preparation and Storage of ganache cake

  • This Oreo cake keeps very well. Cover the cake in the tin with a beeswax cloth or kitchen foil. The ganache cake can be kept in the refrigerator for at least two or three days.
  • You can prepare the cookie base up to two days in advance.
  • The cake tastes best at room temperature. Remove the cake from the refrigerator at least half an hour before serving.

Can I use other cookies for the cake base?

Yes, you can but it will affect the taste of the cake. Chocolate chip cookies are a great alternative.

I prefer dark chocolate. Can I replace the milk chocolate with dark chocolate?

Yes, you can. Dark chocolate is less sweet and more intense, affecting the taste of the chocolate ganache. Use ⅓ more cream than you would using milk chocolate.

How can I best cut the Oreo ganache cake?

For best results, use a clean, warm knife. Clean the knife under warm running water and dry it before cutting a new slice.

Can I double or triple the quantities to make a bigger cake?

Yes you can. Please note that a bigger cake will need more time to set in the fridge.

Ingredients
  

For the Oreo base

  • 1 ¼ cup Oreo cookies
  • ¼ cup butter

For the chocolate ganache

  • 1 cup milk chocolate (chips or a chopped up bar)
  • ½ cup cream (full-fat)
  • 1 tablespoon butter

Topping

  • 1,5 - 2 cups fresh berries (strawberries, blueberries)

Instructions
 

  • Grind the Oreo cookies as finely as possible. Use a food processor or simply put them in a ziplock bag and beat them with a rolling pin until you have very fine cookie crumbs.
  • Meanwhile, melt the butter in a pan and stir in the cookie crumbs untill combined.
  • Line the cake tin with baking paper and pour the Oreo crumbs into it. Spread the mixture over the bottom and press down well. Place the cake tin in the refrigerator until further use .
  • Now heat the cream in a saucepan and break the chocolate into small pieces. Put the chocolate in a bowl and pour the hot whipping cream over the chocolate. Stir with a small whisk until the chocolate is dissolved in the cream. Finally, whisk in the butter.
  • Pour the chocolate ganache over the cookie base and put back into the refrigerator.
  • Let the chocolate ganache cake set overnight in the refrigerator and serve with fresh fruit.
