These pink waffles are an absolute hit for both kids and adults! Kids will love the bright pink color of the waffles (no food coloring, it's beets!) Adults will be happy to hear that they also taste amazing.

Why you'll love these nutritious beet waffles

Don't these waffles look amazing? Thanks to their bright pink color, you immediately feel like taking a bite. The waffles get their amazing color from cooked beetroot, which means they are all natural and no food dye is involved in making these waffles!

The best thing is that you can enjoy this festive breakfast without feeling guilty (you should never feel guilty about what you put in your mouth anyway if you ask me), because these beet waffles are very nutritious! These pink waffles contain beets and banana and are packed with fiber thanks to the addition of buckwheat flour. This makes these pink waffles a filling and nutritious breakfast recipe for kids and adults.

What makes these beet waffles even better is that you only need five ingredients, just put them all in a blender and your batter is ready!

Pink waffles - ingredients

You'll need:

Red beet - these give the pink waffles their insane, bright pink color. Use pre-cooked beets for this recipe to save a lot of time.

Banana - preferably use a well-ripe banana. The riper, the sweeter! An overripe banana is therefore fine to use in the batter.

Milk - you can use a milk of your choice. You can use cow's milk, but a plant-based alternative works just as well. In terms of flavor, I prefer oatmilk or almond milk. If you use a plant-based drink, these pink waffles are vegan.

Buckwheat flour & flour - if you don't have buckwheat flour in the house, you replace it with flour. However, using buckwheat flour does make the beet waffles a lot more nutritious, which is why this is my preference. You might need a little less milk if you replace the buckwheat flour with regular flour.

Toppings - I went for a scoop of yogurt and some banana slices. Maple syrup and chopped nuts or blueberries are also delicious toppings for these waffles.

Fluffy waffles pro tip: replace the buckwheat flour with self-raising flour and the milk with buttermilk for extra fluffy waffles (though less nutritious).

Storing and preparing beet waffles

My tip: double up on the recipe! The waffles keep for a few days in the fridge, and you can also freeze them. Just heat them up in a toaster for a quick & easy healthy breakfast.

I would make the batter fresh, though. I haven't tried it, but I think it will discolor a bit if you make the batter ahead. Besides, it only takes five minutes to make the batter, so no reason to prepare ahead!

Do you have leftover waffles? Store them in the refrigerator for up to two days in a tightly sealed container, or freeze them. They keep for at least six months in the freezer.

Why are my waffles failing?

This is usually because the waffle iron is not hot enough, which is why the first waffle often fails the least. Make sure the waffle iron is really hot, and grease it lightly with sunflower oil before you add the batter.

How do I know when my waffles are ready?

Don't be tempted to open the iron too quickly. When there isn't that much steam coming out of the iron anymore, most of the moisture has evaporated from the waffle and it is therefore cooked. Then gently pull open the waffle iron, when the waffle easily detaches from the bottom, it is ready.

How can I keep the waffles warm?

Preheat the oven to a low temperature (90 degrees) and place the waffles that have been baked off in the warm oven. This way you can all enjoy the waffles at the same time.

How can I reheat the waffles?

You can reheat them in the microwave or - my favourite - in a toaster.

Ingredients
  

  • 5 oz beetroot (pre-cooked)
  • 1 banana
  • 0.85 cup milk (plant based)
  • 2.5 oz buckwheat flour
  • 2.5 oz regular flour

Instructions
 

  • Pre-heat the waffle maker to make sure it's nice and hot.
  • Put all ingredients in a blender and give it a good whizz to make sure the batter is nice and smooth.
  • Lightly grease the waffle maker with some plant based oil and fill up the waffle maker with the pink batter. Make sure you don't put too much in, it will drip down the sides of the waffle maker.
  • Cook the pink waffles according to the instructions of the waffle maker, about 4 minutes should normally be enough.
  • Server the waffles with the toppings of your choice, or serve them plain.
