- 1 ripe avocado
- 2 tablespoon plain Greek yogurt
- 1 cup shredded romaine lettuce
- ½ cucumber, diced
- ½ small red onion, thinly sliced
- 3 oz feta cheese, crumbled
- Garlic sauce or tzatziki, for serving
Instructions

Overnight is even better.
- Heat a large skillet over medium-high heat.Cook the chicken for 6-8 minutes until browned and cooked through, stirring occasionally.
- While the chicken cooks, sauté ½ small red onion, thinly sliced in a little olive oil until softened and lightly caramelized.Stir the onion into the cooked chicken.
