Greek Chicken Flatbread with Chicken Gyros

If you're looking for a quick weeknight dinner that's packed with fresh flavors, this chicken flatbread deserves a spot on your menu. Inspired by classic Greek chicken gyros, this recipe combines juicy, spice-marinated chicken thighs with creamy avocado, crisp vegetables, tangy feta, and a generous drizzle of garlic sauce, all layered on warm flatbread.

It's everything you love about chicken gyros, but even easier to make.

Unlike traditional gyros, which are slowly roasted on a vertical rotisserie, this homemade version comes together in just 20 minutes using a skillet. You still get all those familiar Mediterranean flavors, but with ingredients that are easy to find at any supermarket.

I've made this recipe countless times, and every time I'm reminded why it's one of my favorite quick dinners. It's fresh, filling, and incredibly versatile. Serve it as a simple weeknight meal, cut it into smaller pieces for a party appetizer, or create your own Greek-inspired dinner board with salads, dips, and warm flatbread.

Why this chicken flatbread works

One thing I noticed while researching chicken flatbread recipes is that many of them rely heavily on bottled sauces or pre-seasoned chicken. The result can be overly salty or one-dimensional.

This recipe starts with a homemade gyros seasoning blend instead. It only takes a minute to mix, but it gives the chicken a much fresher, richer flavor than store-bought seasoning.

Another common complaint is dry chicken.

That's exactly why I recommend using boneless, skinless chicken thighs instead of chicken breasts. Chicken thighs stay juicy, develop beautifully browned edges, and are much more forgiving if they're cooked a minute or two longer.

Finally, many flatbread recipes become soggy because all the toppings are piled directly onto the bread. Spreading a layer of creamy avocado first creates a barrier that helps keep the flatbread from getting soggy while adding extra flavor and richness.

Ingredients (and why they're used)

Every ingredient contributes something different to this easy Greek chicken recipe.

Chicken thighs

Chicken thighs are naturally juicy and flavorful, making them perfect for homemade chicken gyros. They stay tender even when cooked over high heat.

Substitution: Chicken breast also works if you prefer a leaner option, but be careful not to overcook it.

Homemade gyros seasoning

A combination of oregano, thyme, smoked paprika, cumin, garlic powder, onion powder, cinnamon, and a pinch of chili powder creates the warm, savory flavor that's typical of Greek chicken.

Flatbread

Soft flatbread makes this recipe quick and easy. Naan, Greek pita, or even flour tortillas can all be used if that's what you have on hand.

Avocado

Instead of using mayonnaise or another heavy spread, mashed avocado mixed with a little Greek yogurt creates a creamy layer that complements the chicken beautifully.

Lettuce and cucumber

Fresh vegetables balance the richness of the chicken and add crunch.

Red onion

I lightly sauté the onion before adding it to the flatbread. This removes its sharp bite while bringing out its natural sweetness.

Feta cheese

Real feta adds the salty, tangy finish that makes the flavors feel unmistakably Mediterranean.

Garlic sauce or tzatziki

Both are delicious. Garlic sauce makes the flatbread rich and comforting, while tzatziki adds extra freshness. Sometimes I even use both.

Tip: you can replace the cucumber & feta with my Simple Cucumber and Dill salad, or add this as a side salad to the dish.

Tips for the best chicken gyros

If you have a little extra time, marinate the chicken for at least 30 minutes. Even better, prepare it the night before. The spices penetrate the meat more deeply, resulting in more flavorful chicken.

Cook the chicken in a very hot skillet, avoiding overcrowding the pan. Giving the chicken enough space allows it to brown rather than steam, creating those delicious, crispy edges that make restaurant-style gyros so irresistible.

Slice the chicken into thin strips before marinating. Not only does it cook much faster, but every bite is coated with the seasoning.

Finally, warm the flatbread for a minute or two before assembling. Warm bread stays softer and is much easier to fold without tearing.

Storage tips and leftovers

Store the cooked chicken separately from the vegetables and flatbread in airtight containers.

  • Refrigerator: Chicken will keep for up to 3 days.
  • Freezer: Freeze the cooked chicken for up to 3 months.
  • Reheating: Warm gently in a skillet for the best texture.

The vegetables and avocado are best prepared fresh.

Leftover chicken is incredibly versatile. Add it to wraps, grain bowls, salads, or even homemade pizza the next day.

Can I use chicken breast instead of chicken thighs?

Absolutely. Chicken breast works well, but don't overcook it to prevent it from drying out.

Can I make the chicken ahead of time?

Yes! The cooked chicken keeps for up to 3 days in the refrigerator and actually tastes even better after the flavors have developed.

Can I grill the chicken?

Definitely. Grilled chicken adds even more smoky flavor and works wonderfully in this recipe.

Ingredients
  

For the Greek chicken

  • 12 oz boneless, skinless chicken thighs, cut into thin strips
  • 2 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon chili powder (optional)
  • ⅛ teaspoon ground cinnamon
  • Salt and freshly ground black pepper

For the Flatbreads

  • 2 large flatbreads or naan breads
  • 1 ripe avocado
  • 2 tablespoon plain Greek yogurt
  • 1 cup shredded romaine lettuce
  • ½ cucumber, diced
  • ½ small red onion, thinly sliced
  • 3 oz feta cheese, crumbled
  • Garlic sauce or tzatziki, for serving

Instructions
 

  • In a bowl, combine 2 tbsp olive oil, 1 tsp dried oregano, 1 tsp dried thyme, ½ tsp garlic powder, ½ tsp onion powder, ½ tsp ground cumin, ½ tsp smoked paprika, ¼ tsp chili powder (optional), ⅛ tsp ground cinnamon, Salt and freshly ground black pepper.
    Add 12 oz boneless, skinless chicken thighs, cut into thin strips and toss until evenly coated.
    Marinate for at least 30 minutes if time allows. Overnight is even better.
  • Heat a large skillet over medium-high heat.
    Cook the chicken for 6-8 minutes until browned and cooked through, stirring occasionally.
  • While the chicken cooks, sauté ½ small red onion, thinly sliced in a little olive oil until softened and lightly caramelized.
    Stir the onion into the cooked chicken.
  • Mash 1 ripe avocado with the 2 tbsp plain Greek yogurt.
    Season with salt and pepper.
  • Warm 2 large flatbreads or naan breads.
    Spread each one generously with the avocado mixture.
    Top with 1 cup shredded romaine lettuce, ½ cucumber, diced, Greek chicken, sautéed onion, and 3 oz feta cheese, crumbled.
    Finish with Garlic sauce or tzatziki, for serving.
    Serve immediately.
