Wild picking - on the lookout for Rosehip
A while ago, I went on a wild picking walk with two guides, who taught me all about wild picking. So when I walked past a vast rosehip bush the other day, I couldn't resist. It was already at the end of its bloom but still contained a few beautiful roses.
I took them with me to make rose syrup. Just take a whiff of one of these beautiful rosehip roses, and you can already imagine what this syrup will taste like.
Ingredients rose syrup
To make this beautiful pink syrup, you will need:

Rose petals - the fragrant leaves of the rose hip bush are perfect for this.
Sugar - For this recipe, you can use either coarse or fine granulated sugar. You can also use another sweetener, such as honey or agave syrup, but this may affect the flavor of the syrup.
Water - bottled water or just plain tap water is fine (if your tap water is of drinking quality, of course).
Lemon - for some freshness, I add a squeeze of lemon.
Variation tip: Add some crushed raspberries or strawberries when cooking the syrup, for a sweet, fruity rose syrup.
Rose Lemonade
Rose syrup can be used to make delicious rosewater lemonade (so tasty!), but it can also be used for other purposes.
For example, dilute the syrup with sparkling wine for a delicious cocktail. Rose syrup is also widely used in Indian cuisine: combine it with coconut milk or make (shaved) ice. The syrup is also a surprising flavoring in cakes and cookies. You can incorporate it into the batter or make a delicious icing with just a hint of rose flavor.
Which roses for rose syrup?
For this recipe, I used rose petals from the rose hip, but you can also use other types of roses.

Please don't use store-bought roses for this recipe; they are often treated with chemicals. An unsprayed rose from your own garden, for example, is perfect! Choose roses that smell good; they taste good, too! If you go wild picking, do not use roses that grow near roads because of exhaust fumes.
How to store syrup
Make sure the bottle in which you store the rose syrup is spotless. Use a tightly sealable bottle that has been boiled out. Store the syrup in the refrigerator; it will keep for weeks.
My tips for this rosewater lemonade recipe
Make sure to let the syrup stand for at least half a day, but preferably overnight. You want to give the rose petals the opportunity to maximize flavour and fragrance to the syrup.

Rose lemonade
Equipment
- 1 cooking pan
Ingredients
- 1 cup water
- 1 cup caster sugar
- 7 roses
- 0,5 lemon
Instructions
- Pull the leaves off the roses and leave them for an hour, allowing any insects to crawl away.
- Combine the rose petals, water, and sugar in a saucepan. Bring the mixture to a boil, stirring occasionally to dissolve the sugar.
- Squeeze half the lemon and stir the juice into the syrup. Let the mixture stand for at least 4 hours, even overnight.
- Sterilize the bottle by boiling it in a pan of water for five minutes. Then, let the bottle dry on a clean tea towel.
- Strain the syrup and pour it into the sterilized bottle the next day.
