Ingredients
  

  • 2.2 lbs russet or Yukon Gold potatoes (peeled and cubed)
  • 4 onions (thinly sliced)
  • 2 tart apples (such as Granny Smith), peeled and diced
  • 2 sweet apples (such as Gala or Honeycrisp), peeled, 1 diced, 1 sliced for garnish
  • 4 bay leaves
  • ½ teaspoon ground nutmeg
  • salt and black pepper (to taste)
  • 1 smoked kielbasa sausage (about 12 oz), sliced and warmed

Instructions
 

  • Cook the potatoes and apples: Place the potatoes, onions, and diced tart apples in a large pot. Add enough water to cover, toss in the bay leaves, and season with salt. Bring to a boil and cook for about 15 minutes, until the potatoes and apples are fork-tender.
  • Mash: Drain most of the water, leaving a few tablespoons in the pot to keep the mash creamy. Remove the bay leaves. Mash everything together with a potato masher until smooth but still slightly rustic. Season with nutmeg, salt, and pepper.
  • Add the sweet apple: Stir in the diced sweet apple while the mash is still hot so it softens slightly.
  • Serve: Spoon the apple mash onto plates, top with slices of warmed kielbasa, and garnish with the remaining apple slices. Serve immediately.
